Coconut Pancakes
Well pancake Tuesday is around the corner (it's the 28th) but in our house, there's at least one pancake day a week. I think I've perfected it and not just for vegan pancakes, but just pancakes in general. But seriously, try these, they're pretty awesome. Again, any replacements needed to alter for dietary requirements are a straight one-for-one replacement.
Prep time: 5-10mins
Cook time: 15 mins for the whole batch, they're pancakes....
Pan Temp: I turn the knob half way (not a euphemism)
Ingredients:
1/2 cup of white sugar
2 tbs of butter (or non-dairy replacement)
2 tbs of egg replacer
2 tsp of vanilla paste (or essence)
1 1/2 cups of coconut/almond milk
3/4 cup of SR Flour
1 cup of coconut shredded or desiccated
Method:
1. Place sugar and butter into a bowl and cream it, cream it good! (this means until it's mixed and the butter turns a lighter colour and has the consistency of cream...duh!) If you don't cream it, it'll probably still taste good though...
2. Add vanilla, egg replacer. Beat it like Michael Jackson until mixed.
3. Add Milk and you know what? you're going to beat it again! Turn on the fry pan at about this stage, you can do it after, your choice buster!
4. Slowly add flour while mixing, this stops the annoying clumps of flour and makes sure it's mixed well!
5. Stir in coconut until there's an even distribution throughout the mixture.
6. Check if the frying pan is the right temperature, by dropping a small drop of water onto it. It should rest and bubble after a bit. If it steams straight away it's too hot and you'll be like "Oh lucky I checked".
7.Spoon the mixture onto a hot frying pan. You shouldn't need butter on the pan. You can make them whatever size you like. I like doing little ones because it makes me feel like a giant.
8. Cook until you can see bubbles forming or the liquid ceases to be glossy. If it cooks before this, you may have the heat up too high! Then flip and cook until it removes from the pan easily.
9. You're done! put whatever topping you like on them, it's your pancake and sometimes you've just gotta live your life, right?
