Basic Vegan Meringue
Just your basic meringue, but Vegan. Tastes the same. Easy to make.

Cook time: 70 mins
Oven Temp: 110ºC
Ingredients:
1/2 Cup of water from tin of Chickpeas (Aquafaba)
1/2 teaspoon of white vinegar
1 teaspoon of vanilla essence
1/2 tsp vanilla bean paste
3/4 caster sugar
Method:
1. Preheat Oven...duh!
2. Place Aquafaba (that's the chickpea water, it's not gross, you're gross!), vinegar, vanilla essence into a bowl and mix with electric beaters until stiff peaks are formed. (This can take up to 15 mins, 7 mins for me....but I'm pretty good)
3. Begin the glorious process of adding the sugar one tablespoon at a time, whilst beating. Also beat in vanilla paste if you haven't already....if you have, it's probably fine, I don't know, I never make that mistake.
4. Pipe mixture onto lined trays. I normally just shove it into a ziplock bag and cute the corner off with scissors.
5. Put the tray into the oven and wait patiently until they feel hard and shell-like. Not earlier, you greedy Augustus Gloop.
6. Once they're out of the oven let them cool and do what you want with them...I generally eat them.
